We learned this method of baking potatoes
from a health professional.
By following
this method, it changes, somewhat, the starch to a protein.

Wash potatoes and place on oven rack.

Bake at 500 for 20 minutes.

Lower temperature to 250
and bake for approximately 40 minutes,
or until done (fork will go into potatoes easily).
Note: These can be
baked either directly on the oven wrack,
if you want a tougher skin
or
wrap with aluminum foil, if you want a more tender skin Search
